Afritada is a Spanish based Filipino dish consisting of chicken, beef, or pork braised in tomato sauce with carrots, potatoes, and red and green bell peppers. It is served on white rice and is a common everyday Filipino meal. In this recipe, I used Instant Pot to show that you can cook Chicken Afritada using Instant Pot. Ingredients

- Salt to taste
- Pepper to taste
- 1/2 tbsp Sugar

Steps
- Press Saute Mode
- Wait for the pot to heat up and add some cooking oil
- Place the chicken in the pot and cook it (season with salt and pepper)
- Once the chicken is cooked, remove from the pot and set aside
- Saute onion and garlic
- Put back the chicken in the pot
- Add Bay leaves, Basil, Crushed Red Pepper
- Add Tomato Sauce, Fish Sauce, Sugar, and Pepper
- Add Potatoes and Carrots
- Add Water
- Cover and set to Manual mode
- Cook for 5 minutes
- After 5 minutes, depressurize
- Open the lid and set to Saute mode
- Remove excess oil
- Check the taste and adjust accordingly (by adding salt and pepper)
- Add Red and Green Bell Pepper
- Mix and simmer for a bit
- Serve it!
