  1. Cut the potatoes, season with salt and pepper
  2. Add rosemary and coat with olive oil
  3. Set aside the potatoes
  4. Season the whole chicken with salt, pepper. Make sure to season inside and outside
  5. Add thyme, oregano and rub it to the chicken
  6. Add garlic in the cavity
  7. Transfer the chicken on the cast iron skillet
  8. Coat with olive oil
  9. Squeeze half a lemon
  10. Insert the lemon in the cavity
  11. Tuck in the wings and tie the legs
  12. Put the potatoes on the sides of the skillet
  13. Sprinkler parsley
  14. Preheat oven to 425F
  15. Bake for 1 hour 30 minutes (or until the dark meat part temp is 170F)
  16. Rest the chicken for 20 minutes 
  17. Serve it!
