Sinigang is a Filipino soup or stew characterized by its sour and savoury taste. It is most often associated with tamarind (Filipino: sampalok), although it can use other sour fruits and leaves as the souring agent. It is one of the more popular dishes in Filipino cuisine. There are different kinds of sinigang. You can use fish, shrimp, pork as some of the main ingredients.
In this recipe, I am using Pork Belly and Pork Ribs as the main ingredients. Pork Belly and Pork Ribs bring out the rich flavor and make your pork sinigang super delicious. The use of Instant Pot, it will help the process of making sinigang much simpler, easier yet delicious. If you love sinigang and if you have Instant Pot, I highly recommend cooking in this method. - 10 cups Water
Note: the amount of ingredients is for your reference. You can add more or less depending on your preferences. If you want more veggies, feel free to add some more. If you want to make it sourer, add more tomatoes and tamarind soup mix.
Steps
- Add Pork Belly and Pork Ribs in the Instant Pot
- Fill in with water until the meat is fully soaked
- Set to Saute mode and bring to a boil for a couple of minutes
- Once scum is out, press cancel and discard the water
- Put back the rinced meat and fill with clean water. I added 10 cups which should reach half fill line in the 8-qt pot
- Add daikon radish, onion, tomato, and taro
- Add salt
- Put the lid on, make sure it is in Seal position
- Set to Pressure Cook, select Pork and cook for 20 minutes in high settings
- After 20 minutes, press cancel and set to Vent to depressurize
- Make sure floating valve goes down before opening the lid
- Remove excess oil
- Mash taro if you want to thicken the soup
- Set to Saute mode and wait for the soup to boil
- Add eggplant, okra and simmer until the veggies are soft
- Add Tamarind Soup Mix
- Add fish sauce to taste
- Give a good stir and ready to serve
