Sinampalukan, also known as sinampalukang manók or tamarind chicken, is a Filipino chicken soup consisting of chicken cooked in a sour broth with tamarind, tamarind leaves, ginger, onion, garlic, and other vegetables. In this recipe, I will be showing how to cook this recipe using Instant Pot.

Note: You can adjust the amount of the veggies based on your preferences. If you like more veggies, feel free to add some more
Steps
- Press Saute Mode
- Add cooking oil to the pot and wait for the pot to warm up
- Saute ginger, garlic, onion
- Add Chicken and cook
- Add fish sauce
- Once the chicken is cooked, add tomato and fill with water
- Add daikon radish and taro and give a stir
- Press cancel put the lid on
- Make sure to set it to Seal position
- Press Pressure Cook, Soup then cook for 10 minutes
- After 10 minutes, press cancel and depressurize (set to Vent position)
- Wait for the floating valve to go down and open the lid
- Press Saute mode
- Add eggplant, green bean and okra
- Add tamarind soup mix and mix well
- Simmer for a while until the veggies to cook
- Taste and adjust accordingly (add more fish sauce, soup mix, etc)
- Add spinach
- Press Cancel and serve it!
