About This Dish
Kare-kare is a Filipino stew complemented with a thick savory peanut sauce. Usually you see this dish in the Filipino birthday party, or some special events such as festivals. It tastes delicious if you eat this with bagoong (shrimp paste)

8 cups water

10 strings long beans
1 banana blossom (https://amzn.to/2mR6J4U)
1 eggplant (https://amzn.to/2mM9Bjl)
1 large onion (https://amzn.to/2mMwdjL)
2 tbsp garlic minced (https://amzn.to/2nw9N6W)
1/4 tbsp salt (https://amzn.to/2MaIEOS)
1/4 tbsp pepper (https://amzn.to/31HUEhn)
6 tbsp rice flour (https://amzn.to/2mMwALb)
3 tbsp annatto powder or atsuete powder (https://amzn.to/2mRcjEq)
2 tbsp sugar (https://amzn.to/2NiwJ4z)
3/4 cup peanut butter or crushed peanuts (https://amzn.to/2mMxxTL)
Steps:
1. Press saute and bring meat to the boil
2. Once the meat is boiled, drain the water and rinse the meat
3. Saute the minced garlic, minced onion and boiled meat together
4. Add water, salt and pepper
5. Put the lid on and close it.
6. Set to Meat/Stew mode and set the cooking time to 40 minutes
7. Once Instant Pot cooking time is over and pot is not pressurized, add the sauce mixture
8. Add peanut butter, salt, pepper and sugar
9. Add the eggplant, long beans and cook for a couple of minutes
10. Add the bok choy and ready to serve!
Sauce Mixture Preparation:
1. Add water to rice flour and mix
2. Add the annatto powder in the rice flour mixture
