Puchero or Pochero is a type of stew that is common to Spanish influenced countries such as South America and the Philippines, The word “puchero” itself is a Spanish term that means “stew pot.” The ingredients vary from region to region but the main ingredients that always stay the same are chickpeas or white beans and meat which can be beef, goat, pork or chicken.
In this recipe, I used Pork Belly which brings out a really good flavor and by using Instant Pot, it levels up the deliciousness in an easy way.

- 1 Knorr Pork Bouillon Cubes (or Chicken Bouillon Cube) – https://amzn.to/3nS6XDP

- 1/2 tbsp Sugar (to taste) – https://amzn.to/3h4Ibil
- 1 cup Water
Steps
- Press SAUTE
- Add oil and pan fry the plantain banana. Cook both sides and remove from the pot
- Add potatoes and carrots to the pot and saute until they are cooked then remove from the pot
- Add pork belly to the pot and cook thorough then remove from the pot
- Add onion and garlic and saute
- Add tomato and continue to saute until the tomatoes get soften
- Put back the cooked pork belly
- Add tomato sauce, fish sauce and pork bouillon cube and mix
- Add water and mix
- Press CANCEL
- Put the lid on and close it
- Press MEAT and cook for 18 minutes
- After 18 minutes of cooking, keep it warm for about 10 minutes and natural release
- Press CANCEL then open the lid
- Remove excess oil
- Press SAUTE
- Put back the cooked banana, potatoes, carrots and beans
- Add chickpeas
- Continue to simmer until the vegetables are soft
- Add bok choy
- Press CANCEL
- Serve it!
