How to Make Ube Custard Donut Recipe using Air Fryer


About: 

Inspired by the Ube Flan Cake featured in Eater. I made simple version of Ube donut (with custard cream) using the Air Fryer to make it easier and less use of the oil. This would be a perfect treat for upcoming Valentine’s day!

Ingredients

Serves 4 – 5 (11 – 12 pcs)

Donut dough

[dry ingredients]

[wet ingredients]

Glaze

Custard Cream Filling


Steps

Making dough

  1. Mix all the dry ingredients and set aside
  2. Mix all the wet ingredients
  3. Combine wet ingredients into the dry ingredients
  4. Mix well until the dough is smoothen
  5. Shape the dough into a ball shape
  6. Grease the bowl with oil, put the dough and cover it with a plastic wrap
  7. Store the bowl in a warm place for the 1st proofing.
  8. Proof it for about 1 hour and 30 minutes or until the size is tripled

Custard Cream Filling

  1. In a pot put egg yolks and sugar
  2. Mix well until sugar is fully dissolve and it looks white-ish
  3. Add cake flour and incorporate gently
  4. Add warmed milk little by little while mixing
  5. Put in a heat (medium) and keep stirring until smoothen
  6. Remove from the heat and transfer it to a tray
  7. Cool down, put cover on and set aside in the fridge

Glaze

  1. Combine all the glaze ingredients
  2. Mix well until all the ingredients are well incorporated
  3. Set aside

Shaping

  1. Once the dough tripled its size, uncover, punch down to release the air
  2. Flatten the dough to about 1/2 inch thickness
  3. Use 3.5 inch cookie cutter to cutout into donut shape
  4. Place the cutout dough on a tray (with parchment paper lining)
  5. Place in the warm place for about 60 minutes or until double its size

Air Frying

  1. Preheat the Air Fryer to 350F for 2 minutes
  2. Spray the Air Fryer basket
  3. Place the dough in the Air Fryer basket
  4. Set temp to 350F and cook for 3 minutes

Custard Filling

  1. Once the donut is cooked, cool it down
  2. Make a hole and inject the custard cream
