Inspired by the Ube Flan Cake featured in Eater. I made simple version of Ube donut (with custard cream) using the Air Fryer to make it easier and less use of the oil. This would be a perfect treat for upcoming Valentine’s day!

Donut dough

Glaze

Custard Cream Filling

Steps
Making dough
- Mix all the dry ingredients and set aside
- Mix all the wet ingredients
- Combine wet ingredients into the dry ingredients
- Mix well until the dough is smoothen
- Shape the dough into a ball shape
- Grease the bowl with oil, put the dough and cover it with a plastic wrap
- Store the bowl in a warm place for the 1st proofing.
- Proof it for about 1 hour and 30 minutes or until the size is tripled
Custard Cream Filling
- In a pot put egg yolks and sugar
- Mix well until sugar is fully dissolve and it looks white-ish
- Add cake flour and incorporate gently
- Add warmed milk little by little while mixing
- Put in a heat (medium) and keep stirring until smoothen
- Remove from the heat and transfer it to a tray
- Cool down, put cover on and set aside in the fridge
Glaze
- Combine all the glaze ingredients
- Mix well until all the ingredients are well incorporated
- Set aside
Shaping
- Once the dough tripled its size, uncover, punch down to release the air
- Flatten the dough to about 1/2 inch thickness
- Use 3.5 inch cookie cutter to cutout into donut shape
- Place the cutout dough on a tray (with parchment paper lining)
- Place in the warm place for about 60 minutes or until double its size
Air Frying
- Preheat the Air Fryer to 350F for 2 minutes
- Spray the Air Fryer basket
- Place the dough in the Air Fryer basket
- Set temp to 350F and cook for 3 minutes
Custard Filling
- Once the donut is cooked, cool it down
- Make a hole and inject the custard cream
