Serves 3 – 4


Steps

  1. Slightly peel the eggplant and cut coarsely
  2. Add canola oil and sesame oil and heat up the pan
  3. Add the eggplant to the pan
  4. Face the skin side down
  5. Once the skin side is cooked, flip to cook the other side
  6. Add sugar, soy sauce, and Sake
  7. Continue to saute
  8. Add chili
  9. Mix miso and mirin
  10. Add the miso mixture to pan
  11. Combine well
  12. Serve it!
