Buffalo Blasts is one of our favorite chicken menus from the Cheesecake Factory restaurant. I used the rotisserie chicken as its filling, flavored with Cheese and spicy buffalo sauce in a spiced wrapper and crispy fried. It is perfect to serve with Celery Sticks and Blue Cheese Dressing.

- 5×5 inch Spring Roll Wrapper
- Blue Cheese Dressing
Steps
- Add chicken, spices, cream cheese, and hot sauce to bowl
- Microwave for a minute or so (to melt the cream cheese)
- Toss them together and set aside
[breading]
- Combine all the breading ingredients and set aside
[batter]
- Beat the eggs and add to a bowl.
- Add the remaining coating ingredients and mix them well
[wrapping]
- Get about a tablespoon amount of chicken
- Put it in the center of the wrapper
- Brush the edges of the wrapper with the batter mixture
- Fold the wrapper into half
[frying]
- Add oil to the pan
- Heat up the pan and wait to reach about 300F (150C)
- Coat the chicken (in a wrap) with the batter mixture
- Coat with the breading
- Fry the chicken for a couple of minutes (or until it turns brown)
- Flip to fry the other side
- Serve with blue cheese dressings and hot sauce with the fresh celery
