Spiral cucumber salad is a type of cucumber salad that is made by cutting the cucumbers into thin spirals. This is done by placing the cucumber between two chopsticks and then cutting it diagonally, making sure not to cut all the way through. The cucumber is then flipped over and cut vertically, creating a spiral.
In this recipe, I marinate the spiral cucumber in a dressing made out of a mixture of sesame oil, garlic, soy sauce, rice vinegar, mirin, sugar, salt, red pepper powder, chili oil, and green onion.
This is a refreshing and healthy salad that is perfect for an appetizer, light lunch, or snack.

Steps
- Cut the edges of the cucumber
- Place the chopsticks (use as the guardrail) and place the cucumber on top of it
- Cut one side of the cucumber in diagonal
- Turn the cucumber and cut the other side in a straight direction
- Add salt and massage it gently
- Set it aside for a couple of minutes to release the liquid
- In a separate bowl, add garlic and sesame oil
- Mash the garlic
- Add rice vinegar, mirin, soy sauce, salt, sugar, red pepper powder, and green onion
- Mix them all
- Add La-yu (chili oil)
- Mix well and set it aside
- Back to the cucumber, gently squeeze it to release the liquid
- Rinse with water
- Discard the released liquid
- Prepare a ziploc bag
- Place the cucumber inside the bag
- Add the dressing in the bag
- Shake the bag, and make sure the cucumber is well coated with the dressing
- Set it aside for about 30 minutes or keep it in the fridge for later use
- Serve it!
