How to Make Butterfly Chicken Recipe

Butterfly chicken is a technique of flattening a whole chicken by removing the backbone and then spreading the breastbone open. This makes the chicken cook more evenly and quickly, and also allows for more flavorful seasonings to be applied.

Butterfly chicken is a delicious and easy way to cook a whole chicken. I also added potatoes as a side dish which is perfect for a weeknight meal or a special occasion. Hope you enjoy this recipe!

Ingredients

Serves 3 – 4

[for the potato seasoning]

  • 1stp Salt
  • 1/2 tsp Pepper

Steps

  1. Preheat oven to 425 F / 220 C
  2. Clean and pat dry the chicken
  3. Cut the middle part of the chicken
  4. Once the middle of the chicken is cut, flip it and flatten the chicken. (Press the chest part of the chicken and crack the ribs)
  5. Make the butter spread by mixing the melted butter, olive oil, minced garlic, dried thyme, dried basil, dried oregano, rosemary, salt and pepper
  6. Place the Chicken on the oven tray
  7. Rub the butter spread on both sides of the chicken
  8. Cut the potatoes into a bite-size
  9. Add salt, pepper and rosemary then toss
  10. Place the seasoned potatoes in a tray
  11. Bake in the oven for 1 hour 30 minutes (make sure chicken’s inside temperature is 170F / 77C)
  12. Once the inside temperature reaches 170F, remove the chicken from the oven
  13. Serve it!
