Pancit Palabok: A Filipino Noodle Feast
Pancit Palabok is a traditional Filipino noodle dish that’s a staple at any fiesta or celebration. This hearty and flavorful meal is sure to satisfy even the most discerning palate. A popular Filipino fast food chain Jollibee is also offering the Pancit Palabok in their menu. (They call it “Palabok Fiesta”)
The dish features thin rice noodles (bihon) covered in a savory garlic sauce. This sauce is typically made with a combination of annatto, vinegar, and spices, giving it a vibrant orange hue and a tangy, slightly sweet flavor. The noodles are then topped with a variety of ingredients, including sauteed pork, shrimp, and a hard-boiled egg.

- 1.2 L Water

Steps
[Palabok Sauce]
- Dissolve the Palabok oriental gravy mix in the water with the chicken broth powder (see the package instructions for the details about the ratio) and set it aside
- Heat the pan with oil
- Saute the garlic, and onion, then add the ground pork
- Season with salt and pepper
- Continue to saute until the ground pork is cooked. (you will see the oil is coming from the pork once the pork is cooked)
- Add Tinapa (smoked fish)
- Add the Plabok gravy sauce
- Add fish sauce, pepper (adjust based on your taste)
- Bring it to a boil and simmer until the liquid is reduced to your liking

- Boil water
- Put the Rice noodles and boil it for 2 minutes
- Drain water and set it aside
[assembly]
- Smash the Chicharron to make the Chicharron crumbs
- Cut the hard-boiled eggs
- Place the noodles at the bottom of the plate first
- Add the Palabok sauce
- Add the toppings (egg, shrimp, chicharron crumbs, green onion)
- Serve it!
