Pancit Palabok: A Filipino Noodle Feast

Pancit Palabok is a traditional Filipino noodle dish that’s a staple at any fiesta or celebration. This hearty and flavorful meal is sure to satisfy even the most discerning palate. A popular Filipino fast food chain Jollibee is also offering the Pancit Palabok in their menu. (They call it “Palabok Fiesta”)

The dish features thin rice noodles (bihon) covered in a savory garlic sauce. This sauce is typically made with a combination of annatto, vinegar, and spices, giving it a vibrant orange hue and a tangy, slightly sweet flavor. The noodles are then topped with a variety of ingredients, including sauteed pork, shrimp, and a hard-boiled egg.

Ingredients

Serves 5 – 6

Note: The amount may vary based on your preferences


Steps

[Palabok Sauce]

  1. Dissolve the Palabok oriental gravy mix in the water with the chicken broth powder (see the package instructions for the details about the ratio) and set it aside
  2. Heat the pan with oil
  3. Saute the garlic, and onion, then add the ground pork
  4. Season with salt and pepper
  5. Continue to saute until the ground pork is cooked. (you will see the oil is coming from the pork once the pork is cooked)
  6. Add Tinapa (smoked fish)
  7. Add the Plabok gravy sauce
  8. Add fish sauce, pepper (adjust based on your taste)
  9. Bring it to a boil and simmer until the liquid is reduced to your liking

[rice noodles]

  1. Boil water
  2. Put the Rice noodles and boil it for 2 minutes
  3. Drain water and set it aside

[assembly]

  1. Smash the Chicharron to make the Chicharron crumbs
  2. Cut the hard-boiled eggs
  3. Place the noodles at the bottom of the plate first
  4. Add the Palabok sauce
  5. Add the toppings (egg, shrimp, chicharron crumbs, green onion)
  6. Serve it!
