Steps
- Preheat oven to 275F135C
- Pat dry the meat with a paper towel
- Season the meat on both sides
- Insert the probe stick in the middle part of the meat (the thickest part of the meat)
- Place the meat on the cast iron pan
- Put the meat in the oven
- Set the thermometer to 128F/53C
- Once the inside temp reaches 128F/53C, remove the meat from the oven
- Set the meat aside
- Heat the pan very well
- Sear the beef all sides
- Rest the meat
- Cut the meat against the grain
- Serve it!
