Ingredients

Serves 7 – 8

[dry ingredients]

[wet ingredients]

[chocolate ganache coating]


Steps

[banana cake]

  1. Preheat oven to 365F/ 185C
  2. Add all the dry ingredients in a bowl (sift the dry ingredients)
  3. Combine well and set it aside
  4. In a separate bowl, put the banana
  5. Use a fork and mash the banana
  6. Add egg, and vanilla extract and mix it well
  7. Add oil and continue to mix
  8. Combine dry ingredients and wet ingredients. Use a spatula and gently combine
  9. Add coffee and continue to combine
  10. Once all the ingredients are combined, pour the mixture into the loft pan
  11. Use a scaler to balance the weight of each loft pan (with this recipe we are using 2 loft pans)
  12. Bake it for 45 minutes or until the cake is cooked (check with a toothpick test)

  1. Boil water in a pot
  2. Once boiled, turn off the heat
  3. Place a bowl on top of a pot
  4. Add the dark chocolate (chopped) and mix until the chocolate melts
  5. Remove the bowl from the pot, add heavy cream in 3 batches
  6. Add honey and mix

[plating]

  1. Remove the banana bread from the loaf pan
  2. Coat the banana bread with chocolate coating
  3. Serve it!
