How to make Kimchi Spicy Soft Tofu Stew Recipe

This is one of my favorite Korean dishes. I order this dish at Korean restaurants every visit. I would like to recreate the taste at home so here it is. It tastes very authentic. It is perfect for the cold weather to warm your body.



Ingredients

[Fish Broth Soup Base]

[Chili Paste Mixture]

[Stew Meat]


Steps

[soup base]

  1. Chop the radish and slice thinly in round
  2. Remove the head and guts of the dried anchovies
  3. Wipe lightly the dried kelp
  4. Put all ingredients in the pot and add water
  5. Bring to boil and boil it for 10 minutes then reduce the heat to low and boil another 20 minutes
  6. Remove from the heat and train, set it aside

[chili paste mixture]

  1. Add the sesame oil in Korean Hot Pepper Flakes
  2. Mix them together until Hot Pepper Flakes are moisted
  3. Set it aside

[stew meat]

  1. Chop onion (minced)
  2. Chop garlic (minced)
  3. Chop green onions (for garnish)
  4. Cut the pork belly into small cubes
  5. Heat up the pot
  6. Put cooking oil and saute onions and garlic
  7. Add pork belly in the pot and continue to saute
  8. Cook pork thoroughly
  9. Add fermented kimchi
  10. Add 2 cups of soup base
  11. Add Soft Tofu and mix them gently
  12. Add Chili Paste mixture
  13. Add eggs and simmer for a minute
  14. Serve it!
