Pinakbet is a popular Filipino dish consisting of vegetables with pork belly and shrimp (or any other seafood) Usually Kabocha Squash is included in the pinakbet which gives some creamy texture to it.

Steps
- Heat the pan and add cooking oil
- Add pork belly in the pan and cook until it is golden brown
- Season with salt and pepper
- Once pork is cooked, set it on the side of the pan
- Add onions, garlic and tomatoes and start sauteing
- Mix with the pork
- Add Shrimp paste and continue to stir
- Add Kabocha squash and continue to saute
- Add Water
- Put the lid on and simmer for a couple of minutes until Kabocha is soften
- Adjust the heat to low-mid heat while simmering
- Once Kabocha is soft, add eggplant and green beans, Okra and bitter melon
- Stir and put the lid on until all vegetables are cooked
- Add the shrimp, give a little stir
- Serve it!
