How to make Ube Custard Cake (Filipino Purple Yam Leche Flan Cake) Recipe

Ube Custard Cake is a combination of Leche Flan (Filipino Crem caramel, caramel custard, egg pudding or caramel pudding) and the Ube cake. It is beautifully layered that you can enjoy the two desserts in a bite. It is a combination of the sweetness of flan and the softness of the Ube cake will make you smile when you taste it. Ingredients

[for caramel]

Steps

[caramel]

  1. Add caramel ingredients (sugar and water) in the pot
  2. Simmer until it turns slightly dark brown
  3. Transfer the caramel into a pan (8×4 inch) and set aside

[flan]

  1. Separate the egg white and yolk, prepare 5 yolks and 1 whole egg
  2. Add Condensed Milk, Evaporated Milk and Vanilla Extract then mix gently
  3. Pinch Lemon Rind in the mixture and set it aside

[ube cake]

  1. Prepare room temperature eggs, separate the yolks and whites
  2. Keep the egg whites for meringue
  3. Add sugar in the yolks and give a whisk
  4. Add Cooking Oil, Milk and Ube Flavoring and mix well and add Vanilla Extract
  5. Prepare the dry ingredients (cake flour, baking powder, salt) sift and combine with wet ingredients, then set aside
  6. Making meringue, add whites, start mixing and add sugar gradually while mixing
    Note: Make sure no other liquids in your whites.
  7. Continue to mix and add Cream of Tartar then add the remaining sugar
  8. Continue mixing until it reaches stiff peak
  9. Add the meringue into ube cake mixture (add them in 3 batches)
  10. Fold them gently into ube cake mixture

[assemble/baking]

  1. Before assembling the cake, preheat oven to 320F
  2. Add the flan mixture using the strainer
  3. Add the ube cake mixture
  4. Tap for few times
  5. Ready a deep pan with hot water and place the cake pan in there
  6. Set time to bake for 55 – 60 minutes
  7. After 30 minutes, cover the cake pan with the foil and continue baking the remaining 25 minutes or so

Note: you can use a skewer to poke the cake and to check. If it is not sticking on a skewer, that means the cake is baked. Check out How to do a Toothpick Test

  1. Remove the Cake Pan from the water bath and cool it down and unmold the cake
  2. Flip the cake on a plate
  3. Serve it!
