How to Make Hiyashi Chuka (Japanese Cold Noodles) Recipe

This is a very popular summer dish in Japan. When the weather is hot and you don’t have an appetite to eat, this dish will revitalize your appetite. It is common in Japan this is served during the summer time.

Ingredients

1pc cucumber (https://amzn.to/300I7rV)

Few slices of imitation crab sticks (https://amzn.to/30k5RmS)

Few amount of pickled ginger (optional) (https://amzn.to/30244aY)

Japanese mustard – Karashi (optional) (https://amzn.to/2NYHl8t)

Dressing:

6 tbsp soy sauce (https://amzn.to/32HqbjO)

6 tbsp rice vinegar (https://amzn.to/2Q9gbi1)

4 tbsp sugar (https://amzn.to/2NiwJ4z)

2 tsp sesame oil (https://amzn.to/2ZYCyLB)

Few roasted sesame seeds (https://amzn.to/2LPMNba)

Procedures

Dressing

1. Mix all the ingredients listed in the dressing 

2. Once all the ingredients are mixed, put into the fridge to cool it down

Toppings and noodles:

1. Add eggs in a bowl and add the sugar and salt

2. Beat the eggs

3. Cook the eggs in the pan and make sure to spread the eggs in the pan to make an egg crepe

4. Flip the eggs once the bottom side is cooked

5. Slice the eggs into thin strips

6. Cook the ham (or heated) and slice it to thin strips

7. Slice the cucumber into thin strips

8. Loosen the imitation crab sticks into thin strips

9. Boil a water.

10. Once water is boiled, drop the noodles and wait until it will boil again

11. Drain the water and rinse the noodles with cold water

12. Add some ice on the noodles to cool down the noodles quicker

13. Prepare the noodles on a plate (or bowl) add the toppings (eggs, ham, cucumber, crab sticks)

14. Pour the dressing
