Inutak (Filipino Baked Sticky Rice) was originated in Pateros Philippines. Came from the word utak (meaning brain in Tagalog) where the texture is soft as the brain. Don’t be fooled with its name. The softness of this sticky rice is so addictive and you can’t stop eating once you tasted it. This dish is so easy to make and so delicious and currently so popular in the Philippines. Steps
[topping]
- Combine Condensed Milk and Coconut Milk
- Mix well and set aside
[main mixture]
- In a bowl, add Glutinous Rice Flour, coconut milk and combine
- Add milk, condensed milk and salt and mix well
- Transfer it in a pan
- Simmer in medium to low heat until thickened
- Keep stirring while simmering
- Once thickened, divide into half and set aside the half
- Add Ube Halaya (Ube Jam) and Ube Flavoring on the remaining half and combine well
- Transfer the ube mixture in a baking dish followed by the regular mixture
- Add the topping on top
- Broil (on low heat setting – 450F) for 8 – 10 minutes or until the top is golden brown
