- 2 tsp Salt
- 2 tsp Pepper

- 2 lbs Potatoes (or more or less as you desired)
Steps
- Cut the potatoes, season with salt and pepper
- Add rosemary and coat with olive oil
- Set aside the potatoes
- Season the whole chicken with salt, pepper. Make sure to season inside and outside
- Add thyme, oregano and rub it to the chicken
- Add garlic in the cavity
- Transfer the chicken on the cast iron skillet
- Coat with olive oil
- Squeeze half a lemon
- Insert the lemon in the cavity
- Tuck in the wings and tie the legs
- Put the potatoes on the sides of the skillet
- Sprinkler parsley
- Preheat oven to 425F
- Bake for 1 hour 30 minutes (or until the dark meat part temp is 170F)
- Rest the chicken for 20 minutes
- Serve it!
