Filipino Adobo is one of the most famous dishes in the world. It is commonly served in Filipino’s dinner. It also serves in the Fiesta (festival) as a festive dish. With simple ingredients and it can last for a couple of days, it is commonly cooked. Typically it is cooked in a regular pot, but for this recipe, we will be using Instant Pot to show it can be cooked as well with Instant Pot. I hope this recipe is helpful for those who have an instant pot only and wanted to cook Adobo in their Instant Pot.

Ingredients

- 1.3 lbs Chicken (any part with bone, preferably dark meat) – https://amzn.to/2Smv66w
- 1/2 cup and 2 tbsp Filipino Soy Sauce – https://amzn.to/3iwLRqw
- 1/4 cup White Vinegar – https://amzn.to/30uHE0e
- 1 head garlic – https://amzn.to/2GqjHQt
- 3 Bay Leaves – https://amzn.to/2SiiNYW
- 1 tsp or more Pepper – https://amzn.to/2SkKOPD
- Salt (to taste)
- Sugar (to taste)
- 1/2 cup Water
Steps
- Set to Saute mode
- Add pork and chicken in the pot
- Add Garlic, Bay Leaves, Water, Salt and Pepper
- Saute the meat until it is cooked. Stir occasionally to cook them evenly
- Add the soy sauce and white vinegar, give a little stir
- Press Cancel
- Put the lid on
- Press Pressure Cook and set to “Custom”
- Set timer for 10 minutes at high settings
- Press Cancel and set to venting position to depressurize
- Open the lid and set to Saute mode
- Add sugar to taste and give a little stir
- Press Cancel
- Serve it!
