About This Dish
Binagoongan is a Filipino dish usually it consists of meat and bagging (shrimp paste). Binagoongan means, cooked with bagging. In this this, pork belly was used but you can add other meat or even different varieties of vegetables.
Ingredients:
3 lbs pork belly or pork butt (https://amzn.to/2LLRaVL)

1/2 tbsp salt (https://amzn.to/2MaIEOS)
1/4 tbsp pepper (https://amzn.to/31HUEhn)
2 pcs bay leaves (https://amzn.to/3525MYE)
4 cups water
2 pcs eggplants (https://amzn.to/2LGZ8PQ)
1 head garlic (https://amzn.to/34MHfH5)
1 large onion (https://amzn.to/300feNl)
1/2 cup to 3/4 cup shrimp paste (bagoong) (depends on your level of saltiness) (https://amzn.to/30FJzMN)
Thai chili (adjust based on your spice level) (https://amzn.to/2O1o9qI)
1 tbsp sugar (https://amzn.to/2NiwJ4z)
Steps:
1. Boil the pork with salt and pepper
2. After 5 minutes, add vinegar and boil until slightly tender for about 15 minutes
3. Keep the pork stock (used in boiling pork belly)
4. Fry the eggplant and set aside
5. Saute the garlic, onion and pork
6. After 5 minutes, add the shrimp paste and saute for 2-3 minutes
7. Add the pork stock about 3 cups and cover it. Wait until the pork is tender
8. Add the Thai chili and seasoning (salt, pepper and sugar)
9. Add fried eggplant – make sure there is enough liquid (it will absorb some of the liquid as you cook them)
