Adobo is a very popular Filipino delicacy. There are different versions of Adobo from using Chicken to Pork or other meat. In this recipe, I used the very tasty pork belly using Instant Pot and also added boiled eggs to level it up. Great protein addition as well as will increase your appetite! Hope you give this a try!

Ingredients
Serves 3 – 4
- 2 lbs Pork Belly
- 1/2 cup Water
- 1/2 cup Soy sauce – https://amzn.to/3Jpv5qU

- 1/2 tsp Salt – https://amzn.to/3rJALGg
- 1 tsp Pepper – https://amzn.to/3uJXQup
- 3 pcs Bay Leaves – https://amzn.to/3swepHw

Steps
- Set to SAUTE
- Wait for the pot to warm up
- Add the pork belly in the pot
- Add water
- Add Soy sauce
- Add White Vinegar
- Add salt and pepper
- Add Bay leaves
- Add garlic
- Mix
- Put the lid on and close it
- Press CANCEL
- Press Meat and cook for 10 minutes
- Press CANCEL
- Set aside the sauce in a separate bowl
- Put the boiled eggs in the bowl with the sauce
- Press SAUTE and pan fry the pork in the pot to caramelize
- Put back the sauce together with the boiled eggs
- Give one big stir
- Press CANCEL
- Serve it!
