How to Make Tonkotsu Shoyu Ramen

About This Dish

Tonkotsu means “pork bone”.  The soup broth is based on pork bones and other ingredients, which are typically boiled for several hours. It has a creamy and rich taste came from pork bone.

Ingredients:

Broth

5 L water

Salt and pepper to taste

Chasyu Meat

1lb pork butt (https://amzn.to/2qlrl6t)

Tare (sauce for soup and chasyu marinade)

160 g soy sauce (https://amzn.to/32HqbjO)

160 g mirin (https://amzn.to/2mbJiCy)

80 g sake (https://amzn.to/2IROYtS)

(Shoyu 2 : Mirin 2 : Sake 1)

Toppings and noodles

Nori

Bean sprouts

Fresh Noodles 

Steps:

[Broth]

1. Soak the pork bones in the water to drain the pork blood

2. Boil all the pork bones

3. Once it is boiled, discard the water and rinse the bones

4. Fill up 5 liters of water with cleaned bones, green onion, ginger and onion

5. Add the Pork butt (for Chasyu)

6. Boil for 2hours

7. Remove the pork butt

8. Continue boiling for another 2 hours or so (observe until it gets to the level of thickness and creaminess of your desire)

9. Use strainer to pour the broth in separate container

10. (optional ) Add soy milk to add some mildness and creaminess

[Tare]

1. Add soy sauce, sake, mirin and dashi into pan

2. boil it for couple of minutes

[Chasyu Meat]

1. Sting tie the pork butt

2. Put in boiling water and boil for 2 hours

3. Remove it from boiled water

4. Marinate with Tare Sauce for 2 hours or overnight in the refrigerator

[Noodles]

1. Boil a water and add the noodles.

2. Boil the noodles for couple of minutes and drain

[Boiled Egg Ni-Tamago]

1. Boil water

2. Add eggs in the boiling water

3. Boil eggs for 8 minutes

[Assemble]

1. Prepare a warm ramen bowl

2. Put 4 tbsp tare into a bowl

3. Add broth until it fills 3/4 of the bowl

4. Add the noodles

5. Add the toppings
