Ingredients

Serves 6 – 7 (can make 2 cake pans with the size of 6in x 2in)

Steps

[caramel]

  1. Prepare a cake pan (6in diameter x 2in deep)
  2. Put sugar in the pot
  3. Turn on heat
  4. Rotate occasionally to caramelize evenly
  5. Repeat until it starts to caramelize
  6. Continue to heat up until it reaches your desired color (darker is more bitter)
  7. Once it reaches your desired color, pour the caramel in the cake pan
  8. Let it cool, set it aside

  1. Preheat oven to 320F/160C
  2. Separate the egg yolks and whites
  3. Put 7 yolks + 2 whole eggs in a bowl
  4. Add condensed milk, break the yolks and gently mix them
  5. Add evaporated milk, vanilla extract, lemon rind
  6. Mix gently
  7. Pinch the lemon rind and remove it from the bowl
  8. Use a strainer and strain the custard
  9. Pour the custard into the cake pan
  10. Remove any air bubbles and cover with the foil
  11. Prepare an oven pan with hot water (for water bath)
  12. Place the cake pan in the oven pan
  13. Put it in the oven and bake it for 1 hour and 10 minutes
  14. After baking, check the Leche Flan is done by shaking it. (If it is watery, put it back in the oven)
  15. Cool it down, unmold
  16. Serve it!
