Steps

  1. Preheat oven to 275F135C
  2. Pat dry the meat with a paper towel
  3. Season the meat on both sides
  4. Insert the probe stick in the middle part of the meat (the thickest part of the meat)
  5. Place the meat on the cast iron pan
  6. Put the meat in the oven
  7. Set the thermometer to 128F/53C
  8. Once the inside temp reaches 128F/53C, remove the meat from the oven
  9. Set the meat aside
  10. Heat the pan very well
  11.  Sear the beef all sides
  12. Rest the meat
  13. Cut the meat against the grain
  14. Serve it!
