Serves 5 – 6


Steps

[mango peach filling]

  1. Mix cornstarch and water and set it aside
  2. Heat the pan, add butter
  3. Add mango and peach
  4. Add cinnamon powder, sugar,  lemon juice
  5. Simmer for 5 minutes or until the liquid is reduced
  6. Add the cornstarch (dissolved in water)
    1. Stir and continue to simmer until it thickens
  7. Set it aside, cool it at room temperature first and put it in the fridge to let it cool further

[pie crust]

  1. Stretch the store-bought pie crust (if the crust is cracked, you can rework the dough by kneading it again and re-rolling it).
  2. Once the dough is stretched to be bigger than your pie tray, put it on the pie tray and shape it.
  3. Stretch the other dough for the top cover
  4. Cool them down in the fridge until it is firm (about 1 hour)

[assemble]

  1. Preheat oven to 350F/175C
  2. Pour the mango peach filling on the pie crust
  3. Put the top cover dough on top
  4. Fold and close the dough together
  5. Cut 3 slits for releasing the steam
  6. Brush with egg wash on top
  7. Sprinkle with sugar, cinnamon
  8. Bake for 45 minutes
  9. Cool it down and let it sit in the fridge (let it sit for a few hours to overnight) before serving
  10. Once the pie is set, serve it!
