How to make Baked Crispy Pata Recipe (non-deep fried Filipino style Roasted Pork Leg)

Crispy Pata is a Filipino dish consisting of deep-fried pig trotters or knuckles served with a soy-vinegar dip. It can be served as party fare or an everyday dish. Traditional cooking is deep frying but in this recipe, we will be baking to use less oil and less mess to clean up after cooking. Same crunchiness as traditional cooking. Steps

[boiling]

  1. Add water in a pot and add the pork leg
  2. Boil it for a couple of minutes to bring out the scum
  3. Discard the water, rinse the pork leg
  4. Put back the pork leg in the pot and add salt, pepper bay leaves and garlic
  5. Boil it for 40 to 50 minutes or until the meat is tender
  6. Remove from the pot, pat dry it and cool down in the fridge

  1. Preheat oven to 350F
  2. Poke the meat with a fork
  3. Scrub some salt on the pork leg
  4. Lightly oil the skin
  5. Bake for 1 hour 15 mins
  6. Adjust the temperature to 470F and bake for an additional 30 minutes(flip the pork halfway or when the skin is crunchy) then bake until another side of the skin is crunchy as well

  1. Chop onions
  2. Add chopped chili pepper (optional)
  3. Add Soy Sauce and Vinegar
  4. Add sugar and pepper to taste
