Meatloaf is a dish of ground meat that has been combined with other ingredients and formed into the shape of a loaf, then baked or smoked. The final shape is either hand-formed on a baking tray or pan-formed by cooking it in a loaf pan. In this recipe, I used the load pan to shape the meat and cook it on a baking tray/rack. In this way, it is easy to serve without digging into a loaf pan.
The cooked meatloaf can be sliced like a loaf of bread to make individual portions. It is made by adding bread crumbs and egg and because the dish can become dry, various techniques exist to keep the dish moist, like covering it with sauce, or wrapping it, or using moisture-enhancing ingredients in the mixture, filling it with fatty meats, rich cheeses, or vegetables.

Steps
[for the glaze]
- In a bowl, add tomato ketchup, brown sugar, tomato paste, mustard powder, garlic powder, onion powder, paprika
- Mix them all well
- Set aside
[for the meatloaf]
- Preheat oven to 350F
- Prepare a baking pan that has a dripping tray (or you can use a baking rack laid with aluminum foil)
- Prepare a loaf pan (9in x 5in x 3in) and grease it
- Heat a pan and add olive oil
- Saute onion and garlic and add some salt
- Remove the sauteed onion and garlic from the heat
- In a separate bowl, add bread crumbs (panko), milk and egg
- Combine
- Add chopped parsley, parmesan cheese, worcestershire sauce and combine well
- Add sauteed onion and garlic in the mix
- Add Nutmeg
- Add ground beef and mix well
- Once meatloaf mixture is well combined, put it in the loaf pan to mold it
- Transfer it on a foil
- Put the half of the glaze made earlier on top of the meatloaf
- Pop in the preheated oven and bake for 50 minutes
- After 50 minutes of baking, pull out the meatloaf and apply second glaze
- Pop it back in the oven and bake for additional 30 minutes
- After 30 minutes, cool it for 10 to 15 minutes before serving
