Bibingka is a type of baked rice cake that is popular in the Philippines especially in the Christmas season. It is usually eaten for breakfast, especially during the Christmas season. It is traditionally cooked in clay pots lined with leaves. It is a subtype of kakanin (rice cakes) in Philippine cuisine. In this recipe, I put cheese and salted egg, and to level up the taste, I also added Ube. We will be making this using the oven to make it easy and delicious.

Steps
- Preheat oven to 190C/375F
- Combine all dry ingredients and set aside
- In a separate bowl, add eggs sugar and combine
- Add coconut milk and melted butter and continue to combine
- Add the mixed dry ingredients into the wet ingredients and combine until well incorporated
- Prepare banana leaves
- Wipe the banana leaves with a damp paper towel
- Pass the banana leaves over the flame to make it soft
- Place the banana leaves in a baking pan (
- Grease the banana leaves with butter
- Pour the Bibingka mixture into a pan
- Add the toppings of your choice such as salted egg, ube
- Add grated cheese on top
- Bake it for 20 to 25 minutes or do the toothpick test to check if it is cooked
- Once baked, switch to broil until the surface gets brown
- Remove from the oven, brush with butter and add desiccated coconut on top
