[for marinade]

[for the topping sauce]

Steps
[marination]
- Scale, gut, and clean the fish.
- Pat dry with a paper towel.
- Score both sides of the fish.
- Stuff in the ginger and green onion.
- Make marinade sauce (fish sauce, Chinese Rice Cooking Wine, pepper)
- Marinate fish on both sides for a total of 15 to 20 minutes.

- Add 1 cup of water to the Instant Pot.
- Place the steaming rack in the Instant Pot.
- Place banana leave.
- Place ginger and green onion.
- Place the fish and place ginger on top of the fish.
- Put the lid on and close it.
- Press STEAM.
- Cook for 10 to 15 minutes.
- Once fish is cooked, transfer the fish to a plate.
- Remove the ginger on top of the fish.
- Place green onion and ginger on top.
- Set aside.
[topping sauce]
- Heat up the pan.
- Add cooking oil,
- Saute ginger.
- Add sesame oil, soy sauce, Chinese rice cooking wine.
- Remove from the heat.
- Pour the topping sauce on top of the fish while the sauce is hot.
[dipping sauce]
- Add soy sauce, green onion, ginger, cilantro, and vinegar.
- Use the dipping sauce as you desired.
