I tasted the Honolulu Cookies Company’s Mini Bites Chocolate Chip Macadamia Premium Shortbread Cookies I bought from Costco and I fell in love with its tastes. I wanted to make a homemade version of these cookies. In this recipe, I achieve a pretty similar taste and I really enjoyed eating them! I wanted to share this recipe so that you can also enjoy the homemade Premium Shortbread Cookies at home as well.

Ingredients
Serves 5 – 6 (can make about 48 pcs)

- 55g (1/4 cup) Brown Sugar – https://amzn.to/2OmA5FY
- 2 tsp Vanilla Extract – https://amzn.to/3sTLigm
- 325g (2 and 1/2 cup) All Purpose Flour – https://amzn.to/3mmQVRD
- 170g (3/4 cup) Semi-Sweet Chocolate Chips – https://amzn.to/3wwEaJ5

- Turbinado Raw Cane Sugar (for coating) – https://amzn.to/3cWgMwV
- Rock Salt (optional)
Steps
- Add butter, brown sugar, white sugar, salt in a bowl and mix until you achieve the creamy texture
- Add vanilla extract,
- Add all purpose flour. Add the all purpose flour gradually. Mix and add again. Repeat until you incorporated all of them
- Once the mixture is sand-like texture, add semi sweet chocolate chips
- Place a cling wrap and add the cookie dough mixture
- Shape it into a log-shape
- Chill the cookie dough for at least 2 hours (or you can keep it in a freezer if you want to bake it in the future)
[Baking prep]
- Beat an egg and set aside
- Prepare Turbinado Raw Cane Sugar in a small bowl
- Unwrap the cookie dough and using knife, slice it to a cookie size
- Retouch the sliced cookie dough
- Put the sliced cookie dough in the beaten egg then in the turbinado raw cane sugar
- Place the sliced and sugar coated cookie dough on a baking pan
[Baking]
- Preheat oven to 350F
- Bake it for 18 to 20 minutes or until the edges are golden brown
- Let it cool and serve it!
