How to Make Agedashi Eggplant / Ohitashi Recipe using Air Fryer

Agedashi Eggplant or Ohitashi Eggplant (Agedashi Nasu / Nasu no Ohitashi) is a very popular appetizer in Japanese household dining. Traditionally, it deeps fry in the oil. Ingredients

Serves 3 – 4


Steps

  1. Prepare a broth/sauce. In a pan, add water, soy sauce, mirin, sugar and hondashi powder
  2. Turn on the heat and bring it to a boil.
  3. Once boiling, turn off the heat and set aside
  4. Cut the eggplant and put some incisions
  5. Spray the eggplants with cooking oil
  6. Place the eggplants in the Air Fryer basket skin side up
  7. Set Air Fryer temp to 350F and cook for 10 minutes
  8. After 10 minutes, open the Air Fryer, flip the eggplants
  9. And cook for an additional 3 to 4 minutes
  10. Transfer the eggplants into a pan with the sauce
  11. Turn on the heat and simmer for 1 to 2 minutes
  12. Turn off the heat
  13. Serve it!
