Ajitama or Ajituke Tamago is a soy sauce-based marinated soft-boiled egg. This is pretty common to see served with ramen noodles in Japan. Using this recipe, you can easily make the same taste as ramen shop’s Ajitama boiled eggs at home. Hope you enjoy this homemade marinated Ajitama soft-boiled eggs at home!

Ingredients

- 3 tbsp Sake (Japanese Rice Wine) – https://amzn.to/38s8Svb

Steps

- Add soy sauce, mirin, sake, sugar and bonito flakes
- Turn on the heat, and bring it to a boil
- Simmer for a minute and turn it off
- Set aside
[boiling eggs]
- Boil water in a pot
- Once water is boiled, lower the heat
- Add the eggs to the pot (eggs straight from the fridge)
- Boil the eggs for 7 – 8 minutes (runny yolk) or 9 – 10 minutes (for soft boiled)
- After boiling the eggs, remove them and put them in the ice-cold water
- Peel the shell and set it aside

- Use a strainer and extract the marinade sauce
- Put the boiled eggs in the Ziploc bag
- Add the marinade sauce to the Ziploc bag
- Marinate the eggs overnight in the fridge
- After overnight marination, serve it!
