This is a recipe for Homemade Vanilla Custard Ice Cream using an Ice Cream Maker. This is going to be your basic ice cream recipe (aka “vanilla” ice cream) and you can put some arrangements with additional flavoring if you like. Ingredients

Serves 3 – 4 (1QT)

Note: double the recipe for the 2QT Ice Cream Maker


Steps

  1. Separate egg yolks and egg whites
  2. In a bowl add egg yolks and sugar
  3. Mix until it turns light yellow and set it aside
  4. Warm up the milk until before it reaches the boiling point (check for small bubbles)
  5. Remove the milk from the heat
  6. Scoop a cup of milk and add to the egg yolk mixture little by little while mixing
  7. Add another cup of milk into the egg yolks mixture gradually while mixing
  8. Put the egg yolk mixture into a pot with the milk
  9. Put the milk back to heat and warm it up in low heat until it reaches 160F/70C
  10. Turn off the heat, transfer the egg yolk/milk mixture into a bowl and cool it down
  11. Add the heavy cream and vanilla extract and mix well
  12. Put in the fridge to cool it down for 1 hour and 30 minutes (or cooler is better)
  13. Put the cooled-down mixture in the Ice Cream Maker
  14. Turn on the Ice Cream Maker  and let it mix for 25 minutes or until the texture becomes creamy
  15. Transfer it to the Ice Cream Tub and put it in the freezer overnight
  16. Serve it!
