About This Dish
This dish is inspired by Din Tai Fung’s Cucumber Salad. It is very refreshing taste. It is a good appetizer and sides for pretty much any dishes.
Ingredients:
- 2 english cucumber
- 1 and 1/2 tsp Salt

[Dressing]
- 1 and 1/2 tsp salt (to taste – add gradually) (https://amzn.to/2MaIEOS)

- 1 tsp soy sauce (https://amzn.to/32HqbjO)

Steps:
1. Punt the cucumber and cut into bite size
2. Massage cucumber with 1 1/2 tsp salt and set aside for a while
3. Mince garlic (optional)
4. Mix all the dressing ingredients together (adjust the ingredients based on your taste preferences)
5. Lightly squeeze the liquid from the cucumber and combine with the mixed dressing
6. Serve it
