Beef Caldereta is a Philippine style Beef Stew. Caldereta’s name is derived from the Spanish word caldera meaning cauldron. The dish is similar to meat stews from the Iberian Peninsula and was brought to the Philippines by the Spaniards during their 300-year occupation in the Philippines. Caldereta is served during special occasions, parties, and festivities.

2 lbs beef stew cut , chuck cut into cubes

1 whole big white or red onion

3 tbsp tomato paste or half a small can

1 small can of tomato sauce or 1 cup

1 knorr beef cubes

2-3 pieces of bay leaves

Half a can of liver spread

1 bowl of red and green bell pepper

4 potatoes

1 large carrots or 1 cup baby carrots

1-2 tbsp sugar

1 cup of water

For marinade: 

2 tbsp soy sauce

1 /2 lemon

1 tbsp knorr seasoning (https://amzn.to/33MyonR )

1 tsp salt

1 tsp pepper

Steps:

Marinate:

1.  Mix meat with lime, knorr seasoning, salt and pepper

2. Marinate it for 2 hours or overnight

1. Set the Instant Pot to Saute Mode

2. Put cooking oil and wait for the pot to heat up

3. Add potatoes and carrots (add salt and pepper) in the pan

4. Cook potatoes and carrots thoroughly and set them aside

5. Cook bell peppers (add salt and pepper) and set them aside

6. Put cooking oil and saute garlic, onion

7. Add beef meat and cook until it turns brown

8. Add tomato paste and tomato sauce and saute for a few minutes until you smell the tomatoes

9. Add knorr beef cube

10. Add sugar evenly and stir a bit

11. Add water

12. Put the lid of Instant Pot and close it

13. Set to Meat/Stew Mode and cook for 20 minutes

14. After 20 minutes of cooking, let it cool down and release the pressure

15. Open the lid, put the Instant Pot to Saute Mode

16. Add liver spread

17. Put back the cooked potatoes and carrots

18. Add cheese (optional)

19. Put back the cooked bell peppers

20. Serve it
