About:
Onigiri is sometimes called as Japanese Rice Ball. It is a chunk of rice filled with some food such as plum, grilled salmon, or you can put pretty much any food it matches with rice. Onigiri is either round shape or triangle. Traditionally, Onigiri is shaped using your bare hands. In this recipe video, we will be using Onigiri Mold to make the shaping part easier for those who are not expert on making an Onigiri.

Steps
[Rice]
- Cook rice (If you are using a rice cooker, follow the rice cooker’s instructions)
[Fillings]
(Filling No 1 – Umeboshi)
- Use the Umeboshi as is
(Filling No 2 – Okaka)
- Put soy sauce in the Bonito flakes until the Bonito Flakes gets moist
- Adjust the saltiness by add extra soy sauce
(Filling No 3 – Salmon)

- Marinate Salmon
- Grilled / Oven Bake the Salmon
- Break it apart
Nori / Seaweeds (optional)
- Cut the Nori into a size of ⅔ of Onigiri
Assembling the Onigiri:
- Using the Onigiri Mold, fill the mold with rice half way
- Add the filling in the middle and add some rice on top of it
- Use the other part of mold and put pressure to shape the onigiri
- Repeat the same steps on other fillings
- Wrap the Onigiri with Nori (Optional)
- Add the filling on top of the Onigiri as an indication to know what filling is in the onigiri
- Serve it
Note: Additionally, you can put Japanese pickles on the side such as pickled radish (Takuan)
