This is a pasta dish I first tasted when I visited one of the pasta restaurants in Tokyo Japan. I could not forget the taste and I wanted to recreate the same taste at home. It is very tasty and so appetizing to eat. Hope you can also enjoy this dish.

- 200g Mozzarella Cheese – https://amzn.to/34hHqu7

Steps
- Mince garlic and onion
- Slice the eggplant
- Slice the bacon into 2 to 3 inch long
- Put olive oil in the pan and cook the eggplant
- Salt and Pepper to taste
- Once eggplant is cooked, set it aside
- Add cooking oil and cook the bacon. Do not over toast. Once it is slightly cooked, set it aside
- Add olive oil and start sauteing onion and garlic
- Add dried basil, red pepper flakes (optional) and bay leaves
- Add whole tomatoes and crushed tomatoes
- Cover and simmer for 2 minutes
- Add white wine
- Salt and pepper to taste
- Add sugar
- Cover and simmer for 15 minutes in low heat
- Crush the whole tomatoes. Cut them into bite size
- Add the cooked bacon and eggplant in the pan
- Add parmesan cheese
- Add dried parsley
- Boil water with salt and cooking oil
- Drop the pasta and cook it based on the instruction on the box
- Drain the pasta, place on a plate together with the sauce
- Serve it!
