How to make Eggplant Bacon Pasta Recipe

This is a pasta dish I first tasted when I visited one of the pasta restaurants in Tokyo Japan. I could not forget the taste and I wanted to recreate the same taste at home. It is very tasty and so appetizing to eat. Hope you can also enjoy this dish.

Steps

  1. Mince garlic and onion
  2. Slice the eggplant
  3. Slice the bacon into 2 to 3 inch long
  4. Put olive oil in the pan and cook the eggplant
  5. Salt and Pepper to taste
  6. Once eggplant is cooked, set it aside
  7. Add cooking oil and cook the bacon. Do not over toast. Once it is slightly cooked, set it aside
  8. Add olive oil and start sauteing onion and garlic
  9. Add dried basil, red pepper flakes (optional) and bay leaves
  10. Add whole tomatoes and crushed tomatoes
  11. Cover and simmer for 2 minutes
  12. Add white wine
  13. Salt and pepper to taste
  14. Add sugar
  15. Cover and simmer for 15 minutes in low heat
  16. Crush the whole tomatoes. Cut them into bite size
  17. Add the cooked bacon and eggplant in the pan
  18. Add parmesan cheese
  19. Add dried parsley
  20. Boil water with salt and cooking oil
  21. Drop the pasta and cook it based on the instruction on the box
  22. Drain the pasta, place on a plate together with the sauce
  23. Serve it!
