About:
Kare-kare is a Filipino stew complemented with a thick savory peanut sauce. Beef (oxtail) is commonly used in Kare Kare dishes. In this recipe, we will be using Pork Pata (Pata Tim) using Instant Pot. It gives you a different savory than beef but something you will enjoy the same as Beef Kare Kare.

Ingredients
- 3 lb Pork Pata (Pata Tim)
- 5-6 bunches Bok Choy

Steps
- Fill Instant Pot with water
- Set to Saute mode
- Put the Pork Pata (Pata Tim) in the pot
- Wait for the pot to boil. Let it boil for about 5 minutes or so to bring the scum out of the pork
- Remove the pork pata from the pot and set it aside
- Discard the water in the pot and rinse the pot
- Rinse the Pork Pata lightly
- Put back the Pot, set to Saute mode and wait for the pot to heat up
- Add Cooking oil, and start sauteing onion and garlic
- Put back the Pork Pata and cook
- Add water until it reaches the 10-cup level
- Add beef cube, salt and pepper
- Cancel the Saute mode, put the lid on, close it
- Set to Meat / Stew mode and cook for 30 minutes
- Let it cool down for about 10 minutes and release the pressure
- Remove the pork from the pot
- Make the Kare Kare mixture by adding Rice Flour, Annatto, Paprika and water then mix well
- Set the Instant Pot to Saute Mode
- In the pot, put Peanut Butter, Kare Kare mixture and mix them well
Note: add 3/4 cup Peanut Butter first and add more based on your taste preferences. - Adjust the heat to normal
- Add Eggplants, boil it for awhile to cook it
- Add long beans, Banana blossom
- Put back the pork pata and add bok choy as well
- Cook for another a minute or so
- Serve it!
