How to make Pork Pata (Pata Tim) Kare Kare Recipe using Instant Pot

About:  

Kare-kare is a Filipino stew complemented with a thick savory peanut sauce. Beef (oxtail) is commonly used in Kare Kare dishes. In this recipe, we will be using Pork Pata (Pata Tim) using Instant Pot. It gives you a different savory than beef but something you will enjoy the same as Beef Kare Kare.

Steps

  1. Fill Instant Pot with water
  2. Set to Saute mode
  3. Put the Pork Pata (Pata Tim) in the pot
  4. Wait for the pot to boil. Let it boil for about 5 minutes or so to bring the scum out of the pork
  5. Remove the pork pata from the pot and set it aside
  6. Discard the water in the pot and rinse the pot
  7. Rinse the Pork Pata lightly
  8. Put back the Pot, set to Saute mode and wait for the pot to heat up
  9. Add Cooking oil, and start sauteing onion and garlic
  10. Put back the Pork Pata and cook
  11. Add water until it reaches the 10-cup level
  12. Add beef cube, salt and pepper
  13. Cancel the Saute mode, put the lid on, close it
  14. Set to Meat / Stew mode and cook for 30 minutes
  15. Let it cool down for about 10 minutes and release the pressure
  16. Remove the pork from the pot
  17. Make the Kare Kare mixture by adding Rice Flour, Annatto, Paprika and water then mix well
  18. Set the Instant Pot to Saute Mode
  19. In the pot, put Peanut Butter, Kare Kare mixture and mix them well
    Note: add 3/4 cup Peanut Butter first and add more based on your taste preferences.
  20. Adjust the heat to normal
  21. Add Eggplants, boil it for awhile to cook it
  22. Add long beans, Banana blossom
  23. Put back the pork pata and add bok choy as well
  24. Cook for another a minute or so
  25. Serve it!
