How to make Steamed Salmon Rice with Mushrooms (Salmon Takikomi Gohan) Recipe using Instant Pot

Salmon Takikomi Gohan or Steamed Salmon Rice is comfort food in Japan. It is easy to make and you get good nutrients from the veggies added in the pot. Typically, it uses Rice Cooker in Japan but we are going to use Instant Pot, in this way, you can cook this quicker and more delicious. It is so easy and it cooks in 2 minutes! Ingredients


Steps

  1. Marinate Salmon with Salt and Sake (Japanese Rice Wine) for about 10 to 25 minutes
  2. Prepare the veggies. Separate the Beech mushrooms individually, chop the white button mushrooms, carrots and green onions

[dashi stock]

  1. Add soy sauce, sake, rice vinegar, salt, hondashi in a container
  2. Add water until it matches the measurement of rice:stock ratio of 1:1. So if you have 3 cups of rice, fill in water until 3 cups (combined with other ingredients)
  3. Mix them and set aside

  1. Rinse rice with water

[cooking]

  1. Add rinsed rice in the Instant Pot
  2. Add Dashi Stock in the Instant Pot
  3. Add all the veggies in the Instant Pot and mix them gently
  4. Add the Salmon on top
  5. Close the lid
  6. Set to Manual mode and cook for 2 minutes
  7. Depressurize the Instant Pot
  8. Once cooked, add mirin and gently mix all the ingredients
  9. Put on a bowl and add striped nori on top (optional)
  10. Serve it!
