[dredging]

[sauce mixture]

- 15 pcs Small Dried Red Chili Pepper (seeded, cut into small pieces) – https://amzn.to/2AWboct
- 1/4 cup Soy Sauce – https://amzn.to/3eeNhEg

Steps
[chicken marination]
- Marinate chicken with salt, pepper and ginger for a couple of minutes
[dredging]
- Add baking powder in cornstarch and dash of salt and pepper
- Coat the marinated chicken
[frying]
- Add oil (deep enough to fry the chicken) in the pan
- Fry the chicken until lightly brown (chicken will be double fry)
- Put back the fried chicken in the pan for 2nd frying
[sauce mixture]
- Heat up a separate pan with oil, add dried red chili peppers, garlic, soy sauce, honey, vinegar, mustard (optional), brown sugar and mix well
- Stir and simmer
- Add the fried chicken and toss with the sauce until chicken is fully coated with the sauce
