Ingredients

Steps

[chicken marination]

  1. Marinate chicken with salt, pepper and ginger for a couple of minutes

[dredging]

  1. Add baking powder in cornstarch and dash of salt and pepper
  2. Coat the marinated chicken

[frying]

  1. Add oil (deep enough to fry the chicken) in the pan
  2. Fry the chicken until lightly brown (chicken will be double fry)
  3. Put back the fried chicken in the pan for 2nd frying

[sauce mixture]

  1. Heat up a separate pan with oil, add dried red chili peppers, garlic, soy sauce, honey, vinegar, mustard (optional), brown sugar and mix well
  2. Stir and simmer
  3. Add the fried chicken and toss with the sauce until chicken is fully coated with the sauce
