Adobong Mani (Pan Fried Red Skin Peanuts) is a very popular snack in the Philippines. You may see it selling on the street by the street vendors. If you miss those tastes, you can always recreate this at home. In this recipe, I will show you how to cook it with delicious garlic chips.
Ingredients
- 1 kg Raw Red Skin Peanuts – https://amzn.to/3cMndjA
- 3 whole Garlic – https://amzn.to/36ipiBm
- 2 cups Cooking Oil – https://amzn.to/3dYDtOx
- Salt to taste
- Red Pepper Flakes (optional)
Steps
- Separate the skin of the garlic and keep the garlic skin aside
- Slice garlic thinly
- Put cooking oil in a pan and start frying the garlic in low heat
- Once garlic turned golden brown, remove from the pan and set it aside
- Add peanuts in the pan and cook in low heat for 20 to 30 minutes
- Stir and toss occasionally to avoid burning it and cook evenly
- Add the skin of the garlic to increase the garlic aroma
- Once peanuts are almost cooked, put in the cooked garlic chips and continue to cook for a couple of minutes
- Remove the peanuts (drain the oil) and transfer in a bowl
- Toss with salt and cool it down a bit
- Serve it!
