Blueberries are sweet, nutritious, and wildly popular. Often labeled a superfood, they are low in calories and incredibly good for you. They’re so tasty and convenient that many people consider them their favorite fruit. In this recipe, we will be using this superfood blueberries to make a muffin. This is a great way to feed your kids healthy and nutritious and at the same time, they can enjoy it. 🙂

[For the muffins]

[for the topping]

Steps
[muffin]
- Sift All Purpose Flour, Baking Powder and Baking Soda
- Add salt, mix and set aside
- On a separate bowl, add cooking oil, sugar, eggs, vanilla extract and mix
- Once all incorporated, add buttermilk and continue to mix
- Add dry ingredients and combine
- Mix until the mixture thickens
- On a separate bowl add fresh blueberries, add all purpose flor and coat the berries. This will prevent the berries to sink in the muffins
- Scoop the mixture and put in the cupcake tray
- Set aside while making the topping
[topping]
- Combine cold, diced butter with sugar, all purpose flor and cinnamon
- Don’t over combine, you want to leave the rough texture on it
- Put in the fridge while waiting for the oven to preheat
- Sprinkle the topping right before putting the muffins in the oven
[baking]
- Preheat oven to 375F
- Bake for 17-20 minutes or until fully cooked through
- Serve it!
