About:
Furikake (振り掛け / ふりかけ) is a dry Japanese seasoning meant to be sprinkled on top of cooked rice, vegetables, and fish. It typically consists of a mixture of dried fish, sesame seeds, chopped seaweed, sugar, Other flavorful ingredients such as katsuobushi (sometimes indicated on the package as bonito), or okaka (bonito flakes moistened with soy sauce and dried again), freeze-dried salmon particles, shiso, egg, powdered miso, vegetables, etc.
In this recipe, we will be making the simple version of Bonito Flavor Furikake. You can use this as a topping of your rice or if you are making Baked Sushi (Sushi Bake), you will be needing this one. Especially if you cannot find the store-bought furikake, you can make one using this recipe.
Ingredients
- 1/2 cup Bonito Flakes (Katsuobushi) – https://amzn.to/2YFxHMI

- 1 tbsp Roasted sesame seeds – https://amzn.to/2VpbalE
- 1 tbsp Nori (seaweed), cut into small pieces – https://amzn.to/2Vqj1iB

Steps
- Prepare a pan (do not heat yet), add bonito flakes, sugar and soy sauce
- Crush the bonito flakes (if there are big chunks) by hand
- Turn on the heat (low heat) and cook for 5 – 6 minutes
- Stir continuously to avoid burning
- Make some room on a pan and add the sesame seeds and toast it slightly
- Turn off the heat and transfer in a tray
- Add Nori and Aonori and mix it
- Transfer in a jar if you want to store it or add on the top of the rice
