Cheesecake is a sweet dessert consisting of one or more layers. The main, and thickest layer, consists of a mixture of soft, fresh cheese (typically cream cheese or ricotta), eggs, and sugar. If there is a bottom layer, it often consists of a crust or base made from crushed cookies (or digestive biscuits), graham crackers, pastry, or sometimes sponge cake. It may be baked or unbaked (usually refrigerated).
Cheesecake is usually sweetened with sugar and maybe flavored in many different ways. It may be flavored by adding vanilla, spices, lemon, chocolate, pumpkin, or other flavors to the cheese layer.
In this recipe, I will show you how to make Cheesecake using Instant Pot. It is an easy and simple way to make a cheesecake if you have an Instant Pot. Steps
[crust]
- Place parchment paper on the bottom of the springform pan (size 6.5 inch and 3 inches deep) and trim the edge of the parchment paper
- Crush the Graham crackers in the Ziploc
- Transfer the crushed graham cracker in a bowl and add sugar, salt and butter
- Combine with hands
- Shape the crust on the bottom of the pan
- Once the crust is formed, put in the freezer to chill it while working on the filling

- On a separate bowl, add cream cheese and beat to make it creamy
- Add Sour Cream, sugar, salt, Vanilla Extract, Cornstarch and mix
- Add Eggs and continue to mix
- Add Lemon Zest (optional)
- Get the pan (with the crust) and pour the cheesecake filling
[cooking]
- In an Instant Pot, add 1 cup of water, set the rack and place the cake pan (with the cheese mixture)
- Close the lid, and set to sealing position
- Set to Cheesecake mode and cook for 25 minutes
- After the timer is up, wait for a couple of minutes to cool down and natural release the pressure.
- Remove the cheesecake from Instant Pot
- If you see water on cheesecake, blot it dry with a paper towel
- Cool down for 10-15 minutes in the freezer while working on icing

- On a separate bowl, add sour cream, sugar and vanilla extract
- Mix them well
[assemble and setting]
- Add the icing on top of the cheesecake
- Spread them evenly
- Chill in the fridge for 4 – 6 hours or until it sets
- Wrap with the hot paper towel to help unmold easier
- Serve it!
