- 1 and 1/2 lb Pork Belly
- 1 and 1/2 tbsp Sake – https://amzn.to/3kbtMQG

Steps
[topping sauce]
- Combine all the topping sauce ingredients
- Set aside
[pork marinade]
- In a bowl, add the pork belly and the rest of the ingredients
- Massage the pork and set it aside
[kimchi rice]
- Cut the kimchi into small pieces
- Extract the kimchi juice from the kimchi
- Add Gochujang, Oyster Sauce, Sugar and Salt
- Mix well and set the Kimchi Juice mixture aside
- On a pan, saute chopped kimchi and add onion
- Saute until caramelized then add cooked rice
- Once the rice is mashed, add the kimchi juice mixture and combine well
- Add salt and pepper to taste
- Set aside

- Beat the eggs and cook on a pan
- Once cooked, slice into strips
- Set aside the fried egg
- Saute vegetables from the order of carrots, mushrooms and spinach. Saute them with sesame oil, season with salt and pepper

- Heat the pan and add pork belly until cooked
- Cut into bite-size
[assembly]
- On a 2qt Tray, make a bed of kimchi rice
- Add the veggies and egg
- Add the grilled pork belly
- Add sauce and cheese on top
[bake]
- Preheat oven to 420F
- Bake for 8 – 10 minutes
